Edika Ikong

1,500.00

Edika Ikong (also spelled Edikang Ikong) is a highly nutritious and traditional vegetable soup from the Efik and Ibibio people of southern Nigeria. It is made primarily with a rich mix of ugwu (fluted pumpkin leaves) and waterleaf, cooked with assorted meats, stockfish, dried fish, and sometimes snails or periwinkle. Palm oil, crayfish, and seasoning give it a deep, savory flavor. Known for its thickness and richness, Edika Ikong is usually served with swallows like pounded yam, fufu, or eba.
